I cut my ribs into 6 ribs per slab
season them the way I like
I have made my own seasoning, with my favorites in one bottle...
sprinkle them on both sides with the seasoning...
I have a gas grill, so I light the fire. put it on high
let it get hot...put the ribs on, rib side up, for just a few
minutes. till seared....then turn them rib side down..lower the heat
to the lowest it can go....I have three burners....so, I turn 2 of
them off and cook the ribs over the 2 off burners....then let them
cook low and long...
do not turn them....for at least 2 hours....
we do not like sauce on them....but in the last 10-15 minutes you
can brush the sauce on....
these should be nice and smokey pink on the inside and tender as get
out....

BBQ Ribs - This is an excellent dish for a barbeque party. Make the
ribs in advance, and when your guests have arrived, all that's left
is to grill them. You'll have them wondering how they got so tender
and tasty so fast.
Recipe Created By : Robbie
Serves : 6
Prep. Time : 3:30
5 Lbs. pork spareribs - sliced apart
1/2 cup butter or margarine
1 med. onion - chopped fine
1 Tbls. minced garlic
1 cup water
1/2 cup white vinegar
1 cup catsup
1 cup barbecue sauce - hickory smoke flavor
1 lemon - juice of
salt - to taste
black pepper - to taste
-Place ribs in a large skillet.
-Cover with salted water and bring to a boil.
-Reduce heat and simmer over low heat for 1 hour, or until meat is
tender, but not falling off the bone.
-Melt the butter in a saucepan and saute the onion and garlic until
the onion is tender.
-Remove from heat and pour into a blender with all remaining
ingeredients.
-Puree for 1 minute, then pour back into saucepan.
-Bring to a boil, then remove from heat.
-Place the boiled ribs in a shallow dish and pour sauce over them.
-Place in the refrigerator for at least 2 hours.
-Barbeque ribs on an outdoor grill over moderately hot coals,
basting with the sauce and turning often until well browned.

I use spareribs. Meaty side up on a rack over a pan in the oven. I
sprinkle with garlic powder or granulated garlic (not salt) and
cracked black pepper and real maple syrup drizzled all over the top
and spread around. Bake for 1 hour at 375, then slather with Sweet
Baby Ray's B-B-Q sauce and bake 1/2 hour more. No fail!

This BBQ sauce is very similar to that served by Dreamland BBQ in
Tuscaloosa and Birmingham, Alabama. If you ever watch Southeastern
Conference football, you have heard the ESPN and network
sportscasters talk about Dreamland's ribs.
Dreamland founder Big John's motto was, "There ain't nothin' like'm
nowhere".
Zesty Southern BBQ Sauce
1 C ketchup
1 C brown sugar
1/2 C melted butter
1/2 C lemon juice
8 Tablespoons chili powder
salt to taste
1/2 teaspoon onion powder (optional)
3/4 C worchestershire sauce
1/2 C prepared mustard
1/2 C vinegar
1/2 C water
4 Tablespoons paprika
2 to 4 teaspoons cayenne powder
Mix ingredients well in a 2 quart saucepan. Heat to just before
boiling. Taste and adjust salt and cayenne to taste. Brush meat
lightly when you put it on the grill. Brush on thickly about 10
minutes before meat is done. Put sauce on table to be poured over
meat. Makes approximately 2 quarts. - Terry

I have been using this method for awhile now. The ribs are tender
and literally falling off the bone. I don't remove the membrane when
using this method as you need it to help keep the juices in. I
always make my own bbq sauce to go with this (recipe follows after
the rib recipe).
BAR-B-Q RIBS
Note: I don't follow these ingredients that much but the process
produces a very tender set of ribs.
4 slabs pork loin back ribs
First Stage Dry Rub:
1/2 cup dark brown sugar
1/2 cup paprika
1/3 cup garlic salt
2 tablespoons onion salt
2 tablespoons chili powder
1 tablespoon cayenne pepper
1 tablespoon black pepper
1 1/2 teaspoons dried oregano
1 1/2 teaspoons white pepper
1 teaspoon cumin
Second Stage:
1/2 cup apple juice per slab
1/2 cup grape juice per slab
Third Stage:
3/4 cup First Stage rub
1/4 cup brown sugar
Finishing Glaze: (I use my bbq sauce below for this stage)
1 1/2 cup Big Bob Gibson Championship Red Sauce or your favorite red
sauce
1/2 cup honey
Raw Preparation: Place slab of ribs bone side down on table.
Preheat oven to 250 degrees. Combine First Stage rub and mix well.
Generously apply rub onto the front and back sides of ribs. Gently
pat to ensure that rub will adhere. Place ribs meat-side up on a
broiler pan and bake for 2 1/4 hours.
Remove ribs from oven. Place each rib meat-side down on its own
doubled aluminum foil square. Foil should be large enough to
completely wrap rib.
Mix the Second Stage juices. Pour 1 cup of liquid over each rib. At
the same time wrap and seal each rib tight. Return to the oven for 1
hour.
Remove wrapped ribs from oven. Remove from foil and apply a medium
coat of the Third Stage rub to the meat-side of the ribs. Place
uncovered in the oven meat-side up for 30 minutes.
Remove ribs from oven and increase oven temperature to 350 degrees.
Brush finishing glaze on both sides of ribs. Place ribs in oven for
10 minutes, or until sauce caramelizes.
Barbecue Sauce
I am now adding a small dried chipolate or a quarter of a large one.
Remove the chipolate when finished as it is extremely hot. However,
the sauce is not extremely hot just has a good flavor from the
chipolate. I am also cutting back a little on the amount of vinegar.
2 cups water
3/4 cup light corn syrup
1/2 cup tomato paste (one small can 6 oz)
1/2 cup vinegar (I use rice wine)
3 tablespoons molasses
3 tablespoons brown sugar
1 teaspoon liquid smoke
1/2 teaspoon salt
1/4 teaspoon onion powder
1/4 teaspoon pepper
1/8 teaspoon paprika
1/8 teaspoon garlic powder
Combine all ingredients in a medium saucepan over high heat and
whisk until smooth. Bring mixture to a boil, then simmer for about
45 minutes or until mixture has thickened somewhat.

Mine are pretty simple but the meat is falling off the bone tender
and they are for sure "wet"!
I use baby back ribs and cut them into individual ribs or small
slabs. Marinate the ribs in a mixture of half commercial BBQ sauce
and half chile sauce (I use homemade chile sauce) for a few hours.
Fire up the grill, when hot remove ribs from the marinade and cook
on the grill just until you have nice grill marks on each side of
the ribs.
Put the ribs into a large roaster and cover with a mixture of half
BBQ sauce and half chile sauce (I don't think you are suppose to
reuse the marinade ....but I do). Bake in a 325 oven or on a grill
that has one burner on and one burner off, place the roaster on the
off burner. Turn now and again, add a little beer or water if
required. Cook for about an hour! Pass the napkins!

Here is a little different twist on Ribs, but they are wonderful!
Cut ribs into approx. 6 sections and broil to get most of the fat
out. Place a small onion, sliced, into Crockpot and top with ribs.
Pour a generous amount of BBQ Sauce over all and cook on low for
about 4 to 6 hours. They are really delicious.

I used the submission from DavidH2 for a large family gathering
using "western" style ribs (a shoulder cut with lots of meat and
little bone)and bottled BBQ sauce for the final step. People raved
about them! They take a long time to prepare but they are worth the
time and effort. Thanks, davidH2!

We got this recipe out of a magazine several years ago and have been
using it ever since. The sauce is wonderful and the meat falls off
the ribs.
Baby Back, Back, Back Ribs
recipe by: Chris Berman
4 cups Tomato Ketchup (or 32 oz bottle)
1/3 cup finely chopped onion
1/4 cup brown sugar
3 tablespoons lemon juice
3 tablespoons rum
3 tablespoons Worcestershire sauce
2 tablespoons liquid hickory flavoring
2 teaspoons Louisiana pepper sauce
6 pounds baby back pork ribs
2 cups water
Preheat oven to 350║.
Cut the rib slabs in half, leaving 6 to 8 ribs per section. In a
large roasting pan, arrange the ribs evenly, then add the water.
Cover pan tightly with foil to keep steam from escaping. Bake for 3
hours.
About 2 hours into the baking time, make the sauce. In a large
saucepan, combine all the ingredients. Simmer over low heat for 1
hour, stirring occasionally.
Prepare coals in a barbeque. Remove ribs from pan. Discard water.
Cover the ribs with sauce, saving about 1 - 1 1/2 cups for use at
table. Grill the ribs for 5 minutes per side or until slightly
charred. Serve with remaining sauce.

They are the BEST. I have had three people ask me for the recipe,
one being my father. (who is amazing on the grill)

As a purist, I could never condone either the boiling of ribs, or a
recipe that doesn't include a grill or smoker. I realize that some
will sell their bbq soul for "fall off the bone" ribs, but if you
have to cook them in the oven, they're just ribs, not bbq. If you're
just going to cook them in an oven, in foil, cook meat loaf instead.

What difference does it make if they are the best ribs you ever ate.
I sauce them with my favorite sauce, brown them, throw them in a
throw away pan, cover them with foil after adding water and sauce
mix to the pan. I cook them on an off burner on the grill, the other
burner down low. In about an hour or so they are falling off the
bone tender and the best tasting ribs you could eat.
If you dont condone this...show me a recipe for bbq ribs that is as
good. One that isnt like chewing leather and I will try that one. I
am open minded.

I use babyback ribs........
i don't care for the ribs that all run one way...but above them are
ribs running the other way....I find those to be tough and do not
have a great flavor....Sam's sells a wonderful baby back rib....but
don't buy the ones that are already cooked and are in with the
already cooked chickens...
I have ofter bought beef ribs.......but i make sure they are from
the prime rib...ask if you are not sure...they look much different
than the regular beef ribs...but they sure are tender and
great......

Cooker, What's the point in cooking them in/on a grill if they never
are open to the grill flavors. All you're doing is boiling them in
sauce wrapped in foil. Not BBQ in my book - Similar to McDonalds. I
guess its a hamburger. I'll admit mine aren't always fall off the
bone (that takes long slow cooking), but I can taste more than the
sauce. In fact I often don't use any sauce at all, just rub, then
add the sause at the table.
Next you'll tell us you put foil over the grill so the meat doesn't
get dirty....

A good old saying ( Don't knock it till you've tried it )
I do brown them on the grill for. What makes you think they are not
as good. By the way I have tried them your way..still good but
unless you cook them very long the fat does not begin to break down
and soften the meat.

Let me correct the statement above. I brown them on the grill before
steaming them in the sauce. So much for people that like to marinade
meat( it hides the flavor,huh ) or even for those of us who cook on
gas and not charcoal. I guess there is only one way to cook
delicious ribs--your way right! My point was simply this, I cook
excellent tasting ribs but I am not saying I would be willing to
condone my cooking only. Post a recipe for the way you cook them, I
may try it and who knows I may like it better.
